I am ridiculously excited that you seem to be in the pro-fruitcake camp. My dad and I made fruitcake together almost every year when I was growing up, and now that I'm on my own with my husband, I make 2 fruitcakes and send one home to my dad.
ReplyDeleteThis year's version is in the oven RIGHT NOW, and for the first time ever, it's an experiment. I took my dad's classic recipe, cut the sugar in half, and replaced the white flour with almond flour and coconut flour -- just to see if I could make a grain-free version work. I'm all for holiday indulgence, but if I can cut a corner here and there to minimize tummy aches (thereby allowing myself to eat more!), I'm all for it.

Recalling your advice to make the buns I had to dig out the book and read up on the recipe. I could not stop there and reread the whole thing with deep pleasure.

My own version of fruitcake is in the oven right now. I've taken Alton Brown's fruitcake recipe which called for dried fruit, not candied, and I've blended it with my oatmeal bar-cookie recipe. There may be more fruit and nuts than batter, but the tastes I had before they went into the oven were wonderful. I don't plan to pour any booze over the completed bars, but one could. I'll post the results at PookandBug.blogspot.com this week.
